Homemade Nachos

As I have mentioned in my previous post, I have started making dishes in which I can add more cheese and veggies.  Recently my girls started liking Nachos and now I am experimenting nachos with different types of vegetables.  This is something I tried last week and it vanished within few minutes.  Here goes the recipe.


Ingredients:

  1. Black beans - 1/2 can (safeway brand)
  2. Corn Tortilla Chips - 2 cups
  3. Homemade Salsa - 1 cup 
  4. Mexican Cheese Blend - 3/4 cup (shredded)(acc to taste)
  5. Milk- 2 tsp
  6. Salt to taste
  7. Pepper powder -  1/2 tsp (optional)
  8. sour Cream - 2 tbsp
 Drain the black beans and wash it in the running water to remove the excess salt from it.  Take the beans in a pan, add that amount of water to cover it and let it cook in medium flame.  It will not take much time as it is already cooked.  Now add couple of teaspoon of cheese to it and mash it well.  Both cheese and beans should get mushy.  Take it out from flame and keep it in a bowl.  Prepare the Homemade Salsa in the mean time.  Keep it in a bowl.  Pre heat the oven to 350 degrees.
Now a take a oven safe wide glass plate. Spread the tortilla chips in it, sprinkle a pinch of salt in it, now add the beans and cheese mixture to it.  Spread the mixture so that it applies in all the small pieces of chips. Sprinkle the remaining cheese on top of these. Spread the salsa on top of it. Also sprinkle the pepper powder on top of it.  Bake it in the oven for 5 to 7 minutes until the sprinkled cheese is melted nicely.  Take it out and let it cool.  Add couple of table spoon of sour cream on top of it and enjoy on a lazy Sunday evening.
