I made this kootu last week. It came out pretty good and it went well with rice an also with Roti. Here goes the recipe.
Ingreients:-
** - If you are allergic to coconut, then try using almonds in the place of coconut. For 2 tsp of shredded coconut, you can use 4 almonds.
Ingreients:-
- Zuchini - 1 cup (chopped)
- tomato - 1 (chopped into cubes)
- Mixed Vegetables - 1 cup (frozen)
- Moong dhall - 1/2 cup
- Toor Dhall - 2 tbsp
- Turmeric powder- 1/2 tsp
- Salt to taste
- Oil -1 tsp
- Mustard seeds - 1/2 tsp
- Urad dhall - 1/2 tsp
- Hing - a pinch
- curry leaves - for garnishing
- Coriander seeds - 3/4 tsp
- channa dhall - 1/2 tsp
- red chillies - 2 or 3 (acc to taste)
- Coconut - 2 tsp (shredded) **
- fenugreek seeds - 1/4 tsp

Zucchini in a traditional south Indian kootu sounds a surprise addition. But with the texture being similar to the many gourds we use, i guess it was tasting as awesome as those!
